Overview

Rajasthani cuisine is known for its rich flavors and hearty dishes. One such gem is the Healthy Rajasthani Khichdi, a nourishing blend of lentils, rice, and aromatic spices. This dish not only tantalizes your taste buds but also provides a wholesome and balanced meal. Here's how to prepare this delectable recipe:

Ingredients:

  • 1 cup moong dal (split yellow lentils)
  • 1 cup basmati rice
  • 2 tablespoons ghee (clarified butter)
  • 1 teaspoon cumin seeds
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon asafoetida (hing)
  • 1 onion, finely chopped
  • 1 teaspoon ginger, minced
  • 1 teaspoon garlic, minced
  • 1 carrot, diced
  • 1/2 cup green beans, chopped
  • 1/2 cup peas
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder (adjust to taste)
  • Salt to taste
  • 4 cups water
  • Fresh coriander leaves, chopped, for garnishing

Instructions:

  1. Rinse and Soak: Wash the moong dal and rice together under cold water until the water runs clear. Soak them in water for about 30 minutes. Drain before cooking.

  2. Sauté the Spices: In a large pot, heat the ghee over medium heat. Add the cumin seeds and mustard seeds. When they splutter, add the asafoetida.

  3. Sauté the Aromatics: Add the chopped onion, minced ginger, and garlic to the pot. Sauté until the onions turn golden brown.

  4. Add Veggies: Incorporate the diced carrot, chopped green beans, and peas into the pot. Sauté for a few minutes until the veggies start to soften.

  5. Spice it Up: Mix in the turmeric powder, coriander powder, and red chili powder. Stir well to coat the veggies with the spices.

  6. Add Lentils and Rice: Drain the soaked moong dal and rice, and add them to the pot. Mix everything together to combine the ingredients.

  7. Cooking Khichdi: Pour in 4 cups of water and add salt to taste. Bring the mixture to a boil. Once boiling, reduce the heat to low, cover the pot, and let it simmer for about 20-25 minutes. Stir occasionally to prevent sticking.

  8. Final Touch: Once the lentils and rice are cooked and the mixture has a porridge-like consistency, turn off the heat. Let the khichdi sit for a few minutes before serving.

  9. Garnish and Serve: Serve the Healthy Rajasthani Khichdi hot, garnished with fresh chopped coriander leaves. It pairs well with plain yogurt, pickles, or papad.
